Method

  1. Preheat oven to 180°C. Grease and line a slice pan.
  2. Combine flour, oats, sugar, and coconut.
  3. Melt butter and syrup over low heat. Combine bicarb and boiling water, then stir into the butter mixture.
  4. Add to the dry flour mixture and stir.
  5. Press mixture into the pan and bake for 25-30 minutes until golden. Cool and cut into squares.

Note: Panela is raw sugar that retains the molasses, giving it a rich flavour.
