Ingredients
- 1 1/4 cups plain flour
- 1 1/4 cups rolled oats
- 1 cup Panela sugar
- 1 cup shredded coconut
- 150g butter, chopped
- 2 tablespoons golden syrup
- 1/2 teaspoon bicarbonate of soda
- 2 tablespoons boiling water
Method
- Preheat oven to 180°C. Grease and line a slice pan.
- Combine flour, oats, sugar, and coconut.
- Melt butter and syrup over low heat. Combine bicarb and boiling water, then stir into the butter mixture.
- Add to the dry flour mixture and stir.
- Press mixture into the pan and bake for 25-30 minutes until golden. Cool and cut into squares.
Note: Panela is raw sugar that retains the molasses, giving it a rich flavour.
